you need a lonnng lens, preferably f2.8 but they can be pretty pricey for non pros. An f4 would manage in digital where you can switch your iso on the fly. wildlife isnt always in the best lighting.
I use a canon 70-200 2.8 USM L with enough light, and shooting subjects far away, I might use a 2x extender (bringing the lens to f5.6) mounted on a canon 1d and 1d mark II. I forget what the focal length multiplier would be with those models.
There are a variety of cheaper canon zooms, they are just going to be slower.
Canon 10d would be just fine for wildlife, and they just announced the next generation of 10D, the 20D which should price at around $1500.
I suppose even a digital rebel would be okay. but really, with any decent body, its the glass.
in digital, canon is ahead of the pack right now by about 2 years.
The 1ds is a great camera. A bit more suited to portraiture and studio stuff. The 1d and 1d mark II are great for sports and moving targets.

yeah like i said the canon digital SLRs are where its at
my friend was dying to get a 10D, now that the 20Ds are available hes drooling even more
let me see..
