Ok, so I have a recipe for a really amazing mole (mexican dark chile curry sauce) that is my mother's but I've been working on quantifying and standardizing it. It's perfect right now, based on feedback from people who have tried it.
I am wanting to sell it made to either whole foods stores or restaurants in small/medium size batches, I do NOT want to give up the recipe. What sorts of health code issues and production problems can I expect to deal with/run into? If anyone knows I would appreciate any help or insight greatly... so far the people I have talked to tend to be very secretive about their business practices, they seem very unwilling to help, understandably so, I guess.

I would buy Nah`s Mole sauce also.
But uh you have to give out some kind of ingredients , not how much of each I dont think but people do have to know whats in it or it has to be labled on the thing if it was gunna be sold I think

Pretty sure you can just list the contents catagoricly by chemical composure so as to be as vauge as possible with what the actual recipie entails.

I got to a local Health food store and much of the shit there is locally made and has just basic ingredients listed but nothing in depth. There is no way I would know how to make it looking at the label so im pretty sure you are safe.

I think there's an actual way to pull off putting "spices" on the list of ingredients in some areas opposed to being specific.

they will be able to tell you everything you need and whom to contact in addition to them

Just have to list the ingredients in order of how much it contains I think. Like this bottle of diet pepsi I'm looking at right now lists Carbonated Water, Caramel Color, Aspartame, Phosphoric Acid, Potassium Benzoate, Caffeine, Citric Acid, and Natural Flavors.
