ive tried multiple times to get into eve online but every time i do i feel its just so complex and overwhelming i end up quitting

Yes, EVE can be overwhelmingly complex. But you have to stick to it and willing to learn.
What I found helpful is the newbie Q&A on the forums. a treasure of information on every subject.
Tip: Join a corp. Most corps are being very helpful to their new members, and should be able to answer all your questions.
Even better would be to apply to EVE-university. It's a corp dedicated to helping new EVE players and to support them.

Just take it slowly. Expect to be confused for about 3 or so months. At the beginning you just kind of log on, learn a little, log off, etc. Don't expect to conquer the game in 1 week. Even if you play it 15 hours a day it still takes long time to assimilate all the information.
Definitely seek out a player corporation to join. There is a recruitment chat channel in game where corporations come to post their messages. About 300-700 people sit in this channel at any given time. There's usually a lot of recruiters around so everyone finds a corp eventually. Even if you're very new there will be corporations willing to take you on.
The benefits of joining a player corporation include:
- Get advice from older players. You can ask them things like what ship you should train for next, are you flying the right ship, are you fitting it right, help on missions, etc.
- Some corps provide skill books for their member for free. I remember EVE University for example would give out free skillbooks that cost less than 1 mil on the market. This includes cruiser and salvaging skills for example and can save you a lot of money and effort in the beginning.
- Some corps offer free ships to their members. I've seen several corporations advertise free cruisers and mining barges for those who join in. Some also offer sign up bonuses in ISK. More established pvp corporations might have ship replacement programs where if you lose ship in combat you can get one at reduced price or for free.
- Then of course there is strength in numbers. When you are mining you need someone to haul your ore otherwise ore thieves will come and steal it all. When you're pvping more numbers means greater dps and also more fun sitting on vent/teamspeak than playing alone.
