I've used http://www.dynamat.com/ in the past and it helps but with a Jeep I think you will be shit out of luck.

1) Drop the ATs for something with a smaller tread or a more quiet tread pattern.
2) A hard top will help a lot, also nice in colder climates.
3) Dynomat or other such product will help buffer engine noise from entering the passenger area. Although I think this would be overkill and expensive. An alternative is to use carpet samples (you can get them for next to nothing if not free) under your normal carpet.
4) Dirve slower, don't gun it, keep the speed limit, etc...
If all else fails just buy a car or something.
