Secret of Mana, Secret of Mana 2, Chrono Trigger, Some people liked Lufia...I didn't, but it has it's acclaims, Mystic Quest (A FF title, but if you overlooked it, it's worth a play), Lots and Lots of Ultima and Wizardry titles too.
That should get you started.

For SNES, CHRONO TRIGGER!!!
That game will leave you busy for a while, because of the number of endings it has.

Chrono Trigger is the way to go. Never got all the way through Earthbound, was fun but fairly hard, and i fianlly gave up when i got my N64. One day I'd like to go back and finish it...

Earthbound isn't that hard until the dream, and then really only cause the statue of mani or whatever the boss in the dream is a b***h to kill with only the one character.

Might check out Star Ocean 1, I heard it was pretty awesome. And I know SO 2 was extremely bad-ass...
Also, ya can't forget about Grandia. Secret of Mana pwns along with Chrono Trigger of course.
On a side note, Xenosaga: Episode One comes out today I believe, anyone else as excited about that as me? Xenogears was probably the best RPG on PS1, other than FF 7 & 9. Thats first on my shopping list..

I'm not sure how people can associate a stellar game like Xenogears with such ass as FFIX. FFVII was good, but not even in XG's league.
XS gets shipped today, should be in stores tomorrow. Personally, I don't have any hopes riding on it (it is a videogame, for Christ's sake) nor expectations. It is a complete -restart- to the series, not a prequel.
As far as I'm concerned, PS2 has squat for good RPGs. Suikoden III was nothing more than a time-killing disappointment (luckily I was alleviated of the game halfway through via a friend breaking said DVD - yay), FFX was another in the heap, and I only like Wild ARMs 3 because I have a soft spot for cell shaded animation; otherwise a terribly bland addition to a terribly bland series. The rest of the RPGs aren't even worth mentioning - they're just that bad.
After having said that, I expect XS to follow suit. If I'm right - figures. If I'm wrong - good.

Glad to hear I was justified in not wasting my money on a PS2. Only reason I have a SNES and PSX is for RPGs (though I did enjoy Super Metroid). However, I have no such excuses for my 2600, 5200, 7800 and Jaguar other than that I'm an old school Atari-head.

if they meshed .hack to one whole game and didn't f**k up the camera angles it would be good. It's ok now just like Wild Arms which is still garbage to me.
Btw XS was released today. Voices suck bad.

Yeah, anyone who watches dubbed anime will probably recognize most of the voices, so I hear. It had been a while since I read what company got the job of dubbing, but I'm fairly sure they were in charge of shit like Cowboy Bebop/Tenchi as well. If that isn't the case, those who did American voices in those series appear in this game. It's either, or, or both - I'm not a morning person.
Regardless, even if I'll be clawing at my ears, I'm still going to give it a play. Nothing else to do when you're as sick as I am. =\
