I know what you're gonna say, there is no best class, they are all perfectly balanced between themselves, and blah, blah, but hear me out:
What class "would be" best for a former WoW player that spent most of his time playing the Rogue, given that there's no stealth as such in AoC?

Not much, really. It's the same stupid question with some glitterdust sprinkled over it.
And besides, the answer is right in front of you - the rogue archetype, then the assassin PrC (prestige class). Stealth is overrated.

The assassin seems to the more "roguelike" class in relation to WoW.

Rogues are incredibly overpowered. I watched a few videos of an assassin in pvp on Age of Conan, and he was winning a few, but also getting his face smashed in 1v1's. Seems a lot more balanced, and assassin does seem like a fun class.

There is a stealth system in AoC, a very detailed one. If you enjoy rogue then assassin or barbarian are obbvious choices.

Judging by what I hear the ranger class is very powerful and the assassin is currently pretty weak. Thats in both pve and pvp. All classes get stealth but I think some will be able to utilise it more effectively than others.

Ranger is best pvp class, you can basically kill anyone in pvp without much sweat. Barbarian is more like rogue in wow, but ranger is a rogue, its a rogue with stealth is very good with bow.
Atm, as ranger you can kill the best tanks in close combat with the bow, no sweat, there is no class in AoC that can match the rangers pvp killrate, they see you, you die, simple as that
