I think most people go pure offensive lineup (Arms?) since warriors still can't taunt for shit. I think warrior taunt cooldown is 10 seconds, but Voidwalker (Warlock pet @ level 10) has 5 second taunt cooldown.

real easy...
for every day leveling, here's the route you want to go.
I'd say in this order, because Mortal Strike is a HUGE helping hand when leveling. it will nearly double your DPS, so it's good to get this as quick as humanly possible.
Arms:
Improved Rend - 1-3 (3)
Improved Heroic Strike - 1-2 (5)
Improved Charge - 1-2 (7)
Improved Heroic Strike - 3 (8)
Deflection 1-5 (13)
Overpower - 1-2 (15)
Deep Wounds - 1-3 (18)
Impale - 1-2 (20)
Sweeping Strike - 1 (21)
2h Weapon Spec - 1-5 (26)
Random Weapon Spec - 1-4 (30) (I'm going Axe)
Mortal Strike - 1 (31)
Random Weapon Spec - 5 (32)
Improved Hamstring - 1-2 (34)
Protection:
Anticipation - 5 (39)
Toughness - 5 (44)
Defiance - 5 (49)
Improved Taunt - 2 (51)
Once you hit 60, assuming you get into a raid type guild, you'll want to respec to a more defensive route. I only suggest doing this if you'll be in a tanking position. Most of the time, you'll have 1-3 "main tanks". the rest are just damage and slight backup tanking. the above setup is fine for that.
Arms:
Improved Heroic Strike - 3 (3)
Deflection - 5 (8)
Protection:
Shield Spec - 5 (13)
Anticipation - 5 (18)
Improved Shield Block - 3 (21)
Toughness - 5 (26)
Iron Will - 5 (31)
Defiance - 5 (36)
Improved Taunt - 2 (38)
Improved Sunder Armor - 3 (41)
Improved Shield Wall - 2 (43)
Improved Shield Bash - 2 (45)
Shield Discipline - 1 (46)
1h Weapon Specialization - 5 (51)
And... That's my suggestion!

My defensive is going to be something like this:

Deflection - 5/5 points
Increases your Parry chance by 5%.
Fury Talents (10 points)
Booming Voice - 5/5 points
Increases the duration of your Battle Shout and Demoralizing Shout by 50%.
Unbridled Wrath - 5/5 points
Gives you a 40% chance to generate an additional Rage point when you deal melee damage.
Protection Talents (36 points)
Shield Specialization - 5/5 points
Increases your chance to block attacks with a shield by 5%.
Anticipation - 5/5 points
Increases your Defense skill by 10.
Toughness - 5/5 points
Increases your armor value from items by 10%.
Iron Will - 5/5 points
Increases your chance to resist stun and charm effects by 15%.
Defiance - 5/5 points
Increases the threat generated by your attacks by 15% while in Defensive Stance.
Improved Shield Block - 1/3 point
Allows your Shield Block ability to block an additional attack, and increases the duration by 0.5 seconds.
Improved Taunt - 2/2 points
Reduces the cooldown of your Taunt ability by 2 seconds.
Improved Shield Bash - 2/2 points
Gives your Shield Bash ability a 100% chance to silence the target for 3 seconds.
One-Handed Weapon Specialization - 5/5 points
Increases the damage you deal with one-handed melee weapons by 5%.
Shield Discipline - 1/1 point
While active, increases the amount of damage absorbed by your shield by 50% and increases the damage done by your Shield Bash ability by 200%. Lasts 20 seconds.
I may put points into improved revenge and concussion blow.

Arms / Fury for a PvP Warrior.
Protection is pretty much useless in PvP fights.
Arms Talents (31 points)
# Improved Rend - 3/3 points
Increases the bleed damage done by your Rend ability by 35%.
# Deflection - 5/5 points
Increases your Parry chance by 5%.
# Improved Charge - 2/2 points
Increases the rage generated by your Charge ability by 6.
# Improved Overpower - 2/2 points
Increases the critical strike chance of your Overpower ability by 50%.
# Deep Wounds - 3/3 points
Your critical strikes cause the opponent to bleed, dealing 60% of your melee weapon's average damage over 12 seconds.
# Impale - 2/2 points
Increases the critical strike damage done by your abilities in Battle, Defensive, and Berserker stance by 20%.
# Two-Handed Weapon Specialization - 5/5 points
Increases the damage you deal with two-handed weapons melee weapons by 5%.
# Axe Specialization - 5/5 points
Increases your chance to get a critical strike with Axes by 5%.
# Sweeping Strikes - 1/1 point
You next 5 melee weapon swings strike an additional nearby opponent.
# Improved Hamstring - 2/2 points
Increases the movement slow effect of your Hamstring ability by 20%.
# Mortal Strike - 1/1 point
A vicious strike that deals 200% weapon damage and wounds the target, reducing the effectiveness of any healing by 50% for 10 seconds.
Fury Talents (20 points)
# Cruelty - 5/5 points
Increases your chance to get a critical strike with melee weapons by 5%.
# Booming Voice - 5/5 points
Increases the duration of your Battle Shout and Demoralizing Shout by 50%.
# Improved Demoralizing Shout - 5/5 points
Increases the attack power reduction of your Demoralizing Shout by 25%.
# Piercing Howl - 1/1 point
Causes all enemies near the warrior to be dazed for 6 seconds.
# Improved Cleave - 3/3 points
Increases the bonus damage done by your Cleave ability by 60%.
# Improved Battle Shout - 1/5 point
Increases the Attack Power bonus of your Battle Shout by 5%.
Protection Talents (0 points)
# None
This build gives you a 10% chance to crit on Normal swings when using an Axe, 60% crit chance with Overpower (the "I Win" button against Rogues), AoE attacks, AoE Daze, DoT's, a really nice snare and stupid amounts of damage.
Best PvP Warrior Build ever.

Heroic Strike is a waste of Rage, I don't even use it at level 37. Sunder Armor > Heroic Strike, and once you get Mortal Strike you can take it off your hot bar completly.

Question for Kurel. If you are human, you should probably do sword spec instead of axe, right?

Changed my build slightly. This should alo solo'n in defensive and allow easy switching of stances with a min amount of rage loss. Some nice changes I would like to see are a few more shield styles in battle stance.

No, not really. Axes tend to have the highest damage range, which means overall you will do more damage with Mortal Strike and Overpower, since both of these skills don't chain off of weapon speed, but rather are reactionary and anytime use.
