What would be the best secondary subclass for the warrior in GW, and why? Ditto for the elementalist. I'm only just starting in the game, and I was thinking about rolling up a War/ Elem character, but then I heard it's not such a hot idea, and now I'm thinking two separate chars, one War and one Ele, but what do I pair them up with?

You should really check out some newbie guides before starting out on your own like this. They have some decent ones over at gwwiki.com
In response to your actual question, E/W is actually a viable choice. Not the best one for a new player, but still playable. A better pair for an Elementalist would be the Mesmer, IMO.
