Why are there racial restrictions on available class selection in AoC? Why prevent Cimmerians from being Assassins, or Aquilonians form becoming mages? Isn't it more important to make the game equally fun for everyone than to adhere to some arbitrary lore that says "such and such can't be this or that"?

Are you suggesting that it's not equally fun to play a barbarian as it is to play a necromancer? If that were the case, I'd agree that there's a problem with the game. However, assuming that the classes are internally balanced, I don't see why it's important to have every class option available to every race in order for people to have fun?
Racial restrictions help shape the world be more like the one imagined in the books. That spells "fun" to me, too.
