FOR those who yearn for a well-aged, full-bodied vintage wine but lack the funds to feed the habit, the solution may lie with a Japanese boffin, a zany-looking contraption, a couple of metres of latex tubing and a few hundred volts of electricity.
Squirrelled away in his chemical engineering laboratory in rural Shizuoka, Hiroshi Tanaka has spent 15 years developing an electrolysis device that simulates, he claims, the effect of ageing in wines. In 15 seconds it transforms the cheapest, youngest plonks into fine old draughts as fruit flavours are enhanced and rough edges are mellowed, he says.
Reds become more complex, and whites drier. A wine costing $10 a bottle could taste the same as one costing twice that, which "will create huge changes to the global wine industry".
It may sound far-fetched, but the ultra-competitive wine industry is taking no chances. Wineries in California, South America and other parts of the wine world are taking a close interest in Mr Tanaka's machine.
The machine works by pumping wine and tap water through a specially designed electrolysis chamber equipped with wafer-thin platinum electrodes. The water and wine are separated by an ion exchange membrane -- the key component, for which Mr Tanaka holds the patent.
Without diluting the wine, the electrolysis causes a rapid rearrangement of the hydrogen and oxygen atoms around the alcohol molecules, which would normally take place over years if the wine were ageing naturally. The electrolyser converts about 4litres of wine a minute.
Mr Tanaka and his team at Innovative Design and Technology are also designing a version for small-scale use.
"There are several ways that this machine could go into service, of which improving the quality of wine at source is only one," he said.
"We are going to make a version of the machine that can be used in restaurants to instantly improve the taste and bouquet of cheaper table wines according to what the customer has chosen."
Although Mr Tanaka may be on the verge of a crucial contribution to the history of wine, he confesses he does not like the stuff. He began his work on fruit juices and switched to alcoholic beverages only to soften the aftertaste of a particularly rough type of sake he drinks.

I heard the wine gets some flavor from the wood of the barrel it's ageing in. It doesn't look like that machine can do that.

Isn't it bourbon that stays in barrels for a long time(7 years possibly). I always thought wine was put in bottles asap.

No, he's not.
Bourbon and wine are both aged in casks, and yes, they both get flavor from the wood the cask is made from.
Some Tequila's are also put into casks, which is what distinguishes a silver tequila from an anejo or reposado.

doesn't normally sit in the cask more than 6 months .
the thing they wont get past is the tradition . it may be the same or even better but people will still want the aged stuff. take s***w top caps verses the cork . the s***w top cap is by far superior for almost every wine made today and could almost eliminate corked and turned wines but people like the traditional cork and refuse to move over ....

I'd love to find a good-tasting wine. I imagine that when I do find one, it will taste like cool-aid but have the consistency of cough syrup. Man, that would be great. Unfortunately, all wines taste like battery acid to me.

train yourself. go read about it and buy a couple bottles that score well as economy wines and see if you can taste different things.
it really can enhance a meal.

I seriously think you will have a hard time getting people past their romance with the age of their wine. even now i can tell people that 2000 was a better year for wine region_001 but they always get the 1999 instead just because the like the idea that its older, given they are the same price.

there ere endless varieties of boons farm that will suit your pallet very well ,madog 20/20 is also another fine option.
there are allot of people who do strange stuff to their wine at my work like , chill $300 bottles of red wine , order two different glasses and make their own mix, pour NutraSweet in the white zin, ice... whatever makes it good to you i guess ...

the only wines I ever liked were fruity ass Arbor Mist wines. I used to make the packaging for them so i tried it and surprisingly it was the only wine ive ever liked.
