How, well, how "epic" (their words, not mine) are the end-game quests and missions going to be? I mean, how can they make world-shattering events when everyone knows how the story ends and who the important people are, and that you don't have any say in whether Frodo dumps the Ring or not?

Well, that really isn't just about the end-game parts, it's what you might call "an overarching concern." The thing to do is keep the Ring-tale from hanging over their head … For example, what's wrong with an end-game quest that has you defending the dwarfholds in the Iron Mountains from orcs and whatnot? No matter how the War of the Ring turns out, if you fail all those dwarves will be dead. Epic enough for you?
