I know there are some people here with a somewhat vast knowledge on this topic...
There are two actions I hear that are very important to eating right. One, your larger meal should be your breakfast. Second, they say it is important to figure out when you are eating because you are hungry and when it is out of habit.
My situation is that I am consistantly not actually hungry until well into the afternoon (2-4pm). Should I still eat in the morning or wait...I am usually up around 9am and often using mornings just to do work so I am usually not active in the morning...

I've heard that if you don't eat in the morning your body slows down its metabolism and the things you eat later in the day are stored more as fat because your metabolism is slower.

There are a lot of great books on the subject, but the easiest to read with the most clear, easy-to-follow directions has to be Body for Life by Bill Phillips.

I googled it and went to a page that had a whole chapter there to read. it was about somebody with AIDs. I scanned the pages and saw "HIV" on just about every page.
Not interested at all.

This would be correct.
There is a lot that goes into "eating healthy". It's not one dimensional and it's going to be different for each person. But bottom line if you don't eat regularly, or don't eat often enough your body goes into "starvation" mode and starts to store food, rather than burn it was energy. This not only increases weight gain but also lowers your energy and productivity.
You don't have to change the oil in your car every 3-5k miles, it'll still run if you don't. But it won't run as good, and over time it can cause damage, or contribute to damage.
