Um, I might be a little new to all this GW business, but I'm sort of confused, maybe you guys can help me clear things up here? The thing is, I keep seeing these "new profession creation" topics crop up all over the place on various forums, and I don't quite understand what everyone is doing. Is there a contest or something? Is Anet looking for ideas for new professions, or what?

No, not to my knowledge. What everyone is doing is called "just having fun", you should try it sometimes 
In other words, it's mostly just idle speculation and idea-tossing.
