Do you guys know of any good one-handed weapons for a my paladin char, I was thinking I should spec for a one hander plus shield combo, as opposed to a two hander, is that a good idea? I mean, is the bonus to Armor Class good enough to warrant the penalty to damage that I would be taking? Thoughts?

If you specialize in Protection, a one-hander plus shield would work well. Protection makes you a very decent tank, and that combo is practically written for tanks. You'll live longer, and your main concern will be to get and keep aggro.
Don't worry about finding good one-handed weapons, there's plenty of all sorts.

If you plan on tanking with your paladin, your best bet is to do shartuuls up in blades edge mountains and hope for the depleted focus sword that can drop. It has a high amount of spell dmg and has parry.

Sword and board is the best way to roll if you are specced Protection or Holy. 2 handers are really only used by Retribution paladins. On my Pally (Holy) I usually stay away from the non-shield offhands as well, since it's really nice to have that extra 4-5K armor when someone decides to beat down the healer.
