I've been watching the show since I was about 7ish (I'm now 20). So picking a favorite episode and quote is hard. However one of my favorites that recently came up is this one:
The episode is The Homer They Fall. It is the one when he gets into boxing and can take vicious beatings, and wins by knocking them down. Then he is supposed to fight the champ. Which "won't be that tough." However during a prison riot, he asks them to shut up and it is immediately ending, with some inmates apologizing to him. My favorite line was this:
"Society put away Drederick Tatum for his brutal crime. But he's paid his debt, and now, he's going to get revenge... on Homer Simpson."
Lol just found it funny how it's being pinned on Homer, that he pushed his mother down a flight of stairs.
There are some more I have, but can't remember them. As I do I'll add them.

I have my favourite episodes saved on my sky+ box so i need to check up the names. Most of them are fairly old ones, i think all the new episodes in the past few years have lost their touch and are desperate for idea's. What annoys me more is the recurring special guest voices they have now. It was fine back when it was credible, but now it seems like they are trying to turn it into an exclusive club using celebrities voice's to get ratings.

Yeah, but you gotta factor a lot of things. The writing teams have changed drastically over the years.
Also they are writing more towards another generation. They figure the people that watched it back in the day are moving on(they are now most likely). So in retrospect they are marketing the show towards the "next generation."
They saw the success Family Guy had, and I feel they are trying to make it too much like that, minus the flash backs. I mean it used to have a story and shit to it, and be remotely realistic. However now it is so over the edge, it is ridiculous. But they feel that the family demographic will like it...however I loathe it. I don't even bother watching it on Sundays, they suck too powerfully.
I mean if that's your cup of tea however, all to you. That's just how I feel.
