Do any of you experienced players sometimes stay with your original ship, only upgrading it this way and that, as opposed to replacing it wholesale with a new and improved ship version? I'm already sentimentally tied to my small rig, and don't think I'd want to replace it with a Tech II version unless I had to… BTW, is there an overview of Tech I/Tech II ship parallels?

With enough upgrades, the line between replacement and alteration is kind of thin. It's that old "Axe of My Grandfathers" syndrome.
As to Tech I vs. Tech II class, if I understand correctly what you're looking for, check out this page: http://en.wikipedia.org/wiki/Spaceships_of_EVE_Online
Frigates / EA Ships or Interceptors
Destroyers / Interdictors
Cruisers / Heavy Interdictors
Battlecruisers / Command ships
Battleships / Marauders
… etc.
