About those gem like things that you can out on your head to improve your AC, I don't know how they're called, something stones, you know what I mean? Well, about them, do they all grant the same type of AC bonus, or does each count as a separate one?

I assume you're referring to ioun stones? Well, first of all, they don't all grant an improvement to the wearer's Armor Class, they're supposed to provide a variety of benefits. However, those that do grant an AC bonus are of the insight type, at least in P&P. Not sure if they changed it for DDO.
