Now, I can't say I'm "new to the game" any more, though I'm still kind of getting the hang of this all very slowly. What I need help now is choosing a second job. If I'm reading this right, the equipment I'm allowed to use is determined by both my jobs, right? As a downside to choosing multiples? If so, is there a master list of cross-jobs to avoid somewhere online?

Nope.
If by "multiples" you mean multiple jobs, then no, this isn’t a downside. Don't know what gave you the idea.
Your main decides what you can and can't use. So, you can choose your second freely in that respect.
