Which one should I choose right off the bat if I want to make decent amounts of money? And yes, I know there's no "best profession" and that it's all about game balance and all that, but I just want to avoid the useless ones, and not make a mistake when choosign the combo.

Well I can only give you the general guideline ATM. As things stand, don't waste your time on production, and instead go into supply gathering. Take advantage of all those suckers who still aren't getting it, and think that the prices favor them and they won't waste their time and money trying to "farm" or "cook".
